・The aqueous solution is 500 times sweeter than sucrose and has a numbing aftertaste. However, since it has a bitter taste at high concentrations, it is often mixed with sugar-based sweeteners. Saccharin itself is almost insoluble in water, so it is used only in chewing gum, and is usually used as a water-soluble sodium salt (sodium saccharinate) in various processed foods. The former Ministry of Health and Welfare classified sodium saccharinate as a non-naturally occurring additive. Due to concerns about safety in the past (see carcinogenicity section), sucralose, acesulfame potassium, and aspartame have mostly replaced sucralose, acesulfame potassium, and aspartame in processed foods in Japan.
